Settings → Preferences → Language. Menus, buttons, messages and exported PDFs switch on the spot. No restart.
Set it in Format → Script Language. SmartType suggests NOCHE, NUIT, NACHT or NOTTE, and continueds print as (CONT.), (SUITE) or (FORTS.).
The Creative Assistant, rewrites and the Script Analyzer reply in the language your script is written in.
